Hank Williams, seu autor, gravou Jambalaya em 1952.
 
Em março de 1956, a menina Brenda Lee, então com 12 anos, lançou Jambalaya, em Springfield, Missouri, USA., fazendo sua primeira aparição na TV. Sua versão em discos Decca foi um grande sucesso.
